Mobile and Gulf Shores, Alabama… tomorrow back to reality and I’m so glad it is…

Well, I’ve spent the last week in a hotel in Mobile, Alabama for work.  I had a weird schedule, working for a few hours in the morning and then 4-8 hours in the evening.  Talk about throwing my diet and workouts off!?  Anyway, I would say the first 4 days, I really tried to do well with my diet and make wise choices.  Toward the end of the week, however, not so much.  To make matters worse, my shoulder is killing me and it feels like I’ve injured it–it’s not just sore! 

Regardless, I am very much looking forward to going home tomorrow and getting back on my schedule of Crossfit 3x a week and Paleo nutrition only.  I’m getting really sick of seeing those around me use things like Adderall and other stimulants to help them lose weight while I bust my ass doing it the right way.  It’s frustrating. 

Oh well, back to it on Monday.  Totally excited!


Easter Buffet at Golden Corral… oh no.

Well, today is Easter and although I typically would make dinner, since I’m going out of town tomorrow for a week, I didn’t want to deal with the clean up or have any leftovers to go to waste. 

The solution, of course, go to a buffet where we can choose from an array of delicious but fattening foods.  To avoid any pitfalls I will only be choosing from the salad bar (fresh veggies and fruit), and their roasted meats. 

I am sad to be missing a week of workouts at Crossfit The Anvil, but I’m hoping to hook up with a box in Mobile to get my WODs in.  If not, there is a fitness center in my hotel, so I’ll just do the best I can.

Anyone who’s ever seen Nemo knows what my blog subject is all about.  Dorie spouts that annoying, yet endearing line over and over.  Whenever I get to a point when I’m frustrated, or have plateaued, I just sing that little line to myself. 

Well, I’ve been eating Paleo for 3 weeks now–totally screwed up this past weekend, but otherwise have done pretty well.  I’m getting ready to complete my 2nd week of Crossfit.  Haven’t lost any weight.  I do think that my body is looking better overall, but what can I say?  I’m a woman… I want to see the scale go lower and lower each time I stand on it, even it has only been 24 hours since that LAST time I stood on it.  🙂  

I’m seriously thinking about throwing away my scale.  It is my biggest enemy.  It tells me to just give up.  It tells me that I’m not working hard enough…that I don’t really care about myself… that I’m not good enough and never will be.  I mean, if I had a person standing there staring me in the face and telling me that, I’d get them out of my life, right? 

Okay, maybe I won’t throw away my scale.  Maybe I’ll just put it away and only bring it out once in a while, when I think it’s going to play nice and say things to me like, “Good job, girl!”  “Way to go!”  “Looking HOT!”  Let’s face it… if I’m watching my body change for the better, then it will eventually reflect on the scale… maybe not as quickly as I would like, but it will happen. 

So scale, scale, go away… come back another day–when I’m 50lbs lighter!  🙂


Pizza, Injury & Popcorn… WTH???

Well, this weekend was HORRIBLE for my Paleolifestyle!  Damn it!  I am so weak. 

Anyway, my kids wanted pizza on Friday, and they had done so well dealing with my new diet that I gave in.  Of course, I had some pizza.  Then, my kid is selling candy bars for baseball, so of course I had the dark chocolate almond (telling myself it was okay because it was dark chocolate).  The next day, I went to walk the Ravenel Bridge with my best friend, only to roll my ankle right before the walk— I walked anyway. 

I did have a fantastic lunch and at Five Loaves in Mount Pleasant–totally delicious and totally healthy.  Then dinner at Yamato’s, which was also pretty good because I didn’t have rice.  So I guess Saturday wasn’t terrible… BUT

Sunday, I went to see The Hunger Games with my kids and it just seemed like sacrilege to not have any popcorn.  I had the smallest size, but I did put extra butter.  Then my mom made my most favorite meal of all… Pork & Sauerkraut with Mashed Potatoes, and if I’d only just had the pork & kraut I would have been fine—but who can pass up mashed potatoes, right?  Then she had strawberry shortcake!!!!  Grrrrr…

Needless to say, I got on the scale this morning and one weekend of indulging completely ruined all of the progress I made over 2 weeks.  I was disgusted.  But, it just proved to me that I need to focus and not cheat–well, as much as possible.  And definitely not 3 days in a row!

Broiled Vegetable & Sausage Rustica with Diavola Sauce

Yum!  Dinner tonight was divine!  Who needs pasta anyway. 

I simply grilled some turkey Italian sausage to sear the outside, then let it simmer in a diavola (spicy marinara) sauce, while I tossed kale, zucchini, spinach, and mushrooms in some olive oil, sea salt, and minced garlic.  I spread the veggie mix out on a large cookie sheet and broiled them in the oven on high heat until the spinach was wilted, and kale started getting crispy edges–zucchini will still be al dente.  Sliced up the Italian sausage and served it in the sauce over the broiled vegetables.  Totally satisfying, and utterly delicious!   Then I had two squares of 82% Cacao Godiva dark chocolate for dessert–decadent!   Check it out below. *PS, I need a better camera. 


Kale, it’s what’s for dinner, too… especially after Crossfit. Oh, did I mention how clear my skin is?

Tonight I had leg of lamb (totally delicious), broccoli, sauteed kale (in coconut oil), and a very small sweet potato.  The best part was hearing my kids go on and on about what a delicious meal it was.  Did I mention I also love hearing my 6 year old tell people, “We don’t eat at fast food anymore.  It’s not healthy for us… it will make us sick.”  And, he’s taken a genuine interest in our food choices, often asking me if we are making healthy ones.  And, despite Caleb being 16, he’s not having any problem eating the Paleo lifestyle. 

One of the BEST side effects of this diet is that my skin is FINALLY clear again.  It was so strange.  I had always had a peaches ‘n cream complexion until I had my youngest son… then suddenly I struggled with adult acne.  I almost always had some kind of outbreak, especially around my mouth and chin (sexy, right?)  Right now, my skin is clearer than it’s been in YEARS!  And, all it took was eliminating grains, dairy and legumes.   I’m never going back!
